can't believe no one has mentioned Stalker, it's awesome especially with some of the mods.

"The less you eat, drink and buy books; the less you go to the theatre, the dance hall, the public house; the less you think, love, theorise, sing, paint, fence, etc., the more you save – the greater becomes your treasure which neither moths nor rust will devour – your capital. The less you are, the less you express your own life, the more you have, the greater is your alienated life, the greater is the store of your estranged being." Karl Marx

I have been gaming so long now, early 80's and onwards. Played so many different titles its hard to pick the games that I would consider classics, anyhows I'll give it a go!!!
I'll try and keep this in order of era (8bit, 16 bit, 32 bit etc) so you will know what will require emulators etc, I'm keeping away from Arcade machines and going for conversions on the machines that people have / had at home.
8 Bit (ZX Spectrum & Commodore 64)
Outrun (Speccy)
Buggy Boy (C64)
Last Ninja Trilogy (C64)
Salamander (C64)
Nemesis (C64 or Speccy, shooter not 2000 AD character)
Bruce Lee (Speccy)
Wizball (C64)
Head over Heels (Speccy or C64)
Ace of Aces (C64)
Impossible Mission (C64)
Bionic Commando (C64, Euro version not American)
Chiller (C64)
Hunchback 1&2 (C64)
Hawkeye (C64, also look out for other games by Thalamus)
IK+ (C64)
16 Bit
Turrican (Amiga)
Dungeon Master (Atari ST or Amiga)
Bloodwych (ST or Amiga)
Batman the Movie (ST or Amiga)
Sonic the Hedgehog (Megadrive)
Splatterhouse (Megadrive)
Lotus Esprit Turbo Challenge (Amiga)
Shadow Warriors (ST or Amiga, this was actually an early Ninja Gaiden game)
Shinobi (Amiga or ST, Super version was great on the Megadrive also)
Ninja Spirit (Amiga or ST)
Chase HQ (Atari ST)
Fire & Ice (Amiga)
Driller (Amiga)
StarGlider (Amiga, 2 was also awesome)
Scratch the order of Era, my head is starting to hurt!!!
Medievil 1&2 (PSX)
AvP (Atari Jaguar)
Tomb Raider (PSX)
Legend of Zelda (Gameboy)
Ocarina of Time (N64)
Mario 64 (N64)
Donkey Kong Country (Super NES)
Street Fighter 2 (Super NES)
System Shock 2 (PC)
Nocturne (PC)
Planescape Torment (PC)
Nomad Soul (PC)
Rock n Roll Racing (Super NES)
Farcry (PC)
GRAW 2 (360 or PS3)
Batman Arkham Asylum (Any format with this one)
Severance Blade of Darkness (PC)
Enclave (PC)
Neverwinter Nights (PC)
Just a few there, will add more to the list when I'm not getting talked at continuously.
Wow, I'm amazed at the number of responses so far! Thanks to all those who've suggested games, please keep them coming!
BG2+ToB reall need to be played on "Ascension" difficulty to get the best out of them, that said with the exception of Planescape they are the standout single player RPG by a good distance.
Others I would recomend are as follows:
Elite (Amiga or BBC versions)
Eagles Wing (BBC B - best side scrolling shooter ever)
Far Cry
Half Life (if just for the organic gravity gun - corpse throwing 4tw)
Manic Miner
Fear (in the dark with lots of coffee)
Prince of Persia (Sands of Time)
Serious Sam (co-op with lots of beer)
Spotted someone mentioned Mirrors Edge which is a lot of fun if annoyingly difficult at times.
If Wisdom is the coordination of "knowledge and experience" and its deliberate use to improve well being then how come "Ignorance is bliss"
Jet Set Willy, on the Spectrum
Demon's Winter, (ST or Amiga?...can't remember)
Black and White on PC
IL-2, any of them, but the later the better, not console version.. PC 100%
Guitar Hero 1, for the major hit of being an Axe God on your own
CoD4, "All Gillied Up" sniper lvl on PC
Prince of Persia, Sands of Time on PS2, because it just WORKED.... it was soooo well controlled.
And prolly... Lemmings.

Oh boy, some of the games mentioned on this page alone bring back some memories,
Maniac Miner and Elite, wow Spectrum memories!!!
Going back to that age i think,
Starquake
knightLore
and maybe
Paralax (correct name i think, was on the C64)
Modern stuff,
Fallout 3 (the sheer scale of this game puts it in my list)
Forza 2
COD 4
I think i'll ponder this a bit more...........
erm is no one going to mention finaly fantasy 8?? my god what a game!
Demon's Souls (just got its US release today) if you ever have to play 1 RPG before you die - make it this

Revenge of the Mutant Camels. Jeff Minter at his finest. Perhaps.

Hmmm, a lot of RPGs here seemingly, which is slightly suprising, given the stereotypical FPS gamer image, not that aren't a lot of FPSs too, just more RPGs than I was expecting! Any PC racers that are a 'must play'?
Please keep 'em coming!
