For me - probably Birdsong by Sebastian Faulks.
Hardly the most 'educated' choice but my fovourite read is 'The Dragonlance Chronicles' by Margaret Weis & Tracy Hickman. Read it twice now and will certainly read again.

Very tough question without breaking it down into genres, I could certainly give you my favourites for each genre, but best book ever?

Was so engrossed by it that I sat and read it cover to cover in a day

Going by your avatar I would recommend decisive battlesfields of the western world by J.F.C. Fuller; go for the abridged version and its a history of europe based around battles. The unfortunately was a friend of Oswald and the fuhrer though so keep in mind some of his views may be a bit slanted.
Les Miserables (abridged) although I can't think of much at the moment.

I havent read much, but the most gripping book i've read yet is nikki sixx's Heroin Diaries... an awesome book!
I have Motley Crue Dirt on my shelf - not read it yet but I did read

The best book I've read recently is still Shock Doctrine by Naomi Klein, really eye opening stuff tbh
Night Watch by Terry Pratchett, to me it refines the very best of the Discworld series.

Personally I felt the second trilogy was better "Legends" but I always like Raistlin.
As for my choice thats a tough one, but if pressed I'd have to go for Altered Carbon by Richard Morgan. How many main protagonists couyld you say this of...

If Wisdom is the coordination of "knowledge and experience" and its deliberate use to improve well being then how come "Ignorance is bliss"
I can't say fav book of all time but best book I read last year was by far "Persian Fire" by Tom Holland. Really engrossing story and brilliantly told, i found it much better than "Rubicon" his first book.
You should definately read up to Night Watch, to see Sam Vimes evolve from his humble beginings in Guards! Guards!. The key ones are Feet of Clay, The Fifth Elephant and perhaps Thud
