Roast some red peppers under the grill add some pesto sauce and goats cheese then insert between your bread !!
best way i found to make a sarnie even better and a bit different is to put a fresh slice of toast in the middle, makes it all crunchy and warm, very good!
for example:
slice of white bread
mayo
lettuce
cheese
warm buttered toast
assortment of meats ie ham / chicken / beef / bacon / or anything else you can think of
mayo
bread
best ever!

Strong salami etc, with strong cheese, watercress and rocket.

I'm just so envious that there are people out there that have these ingredients readily availalbe in their fridge/pantry etc! I thank myself lukcy if I've got a slice of ham to thrown onto a cheese sarnie and if I've got five minutes spare I may go mental and peel and onion and a few mushrooms and throw it all on and bung it under the 'George Foreman' for five minutes...and that's me considering myself being elaborate. Sigh

A couple of splashes of tabasco sauce should spice up any boring sarnie.
I recently did pimp out a sarnie, in the most extreme fashion. A large sunday dinner party left me with remaining roast rib of beef and half a large chicken. I thinly carved the beef and lightly fried it with some sliced brown and red onion with salt and black pepper, and did similar with some more thickly carved chicken. I then layered this on a slice of freshly baked bread, thickly cut ofc, and topped with some sliced cherry tomatoes fried in olive oil with black pepper and fresh basil. I then covered it in greated mild chedder and a little fresh parmesan (not the rubbish stuff from a shaker obv.) and grilled it until the cheese was just melted and the sandwich was warm.
Now, im not recommending people actually go to that length on a daily basis, but if you ever find yourself with the bare essentials about, i suggest making a similar approach. Really, Really, Really, Really, good. Promise.
Bacon, Brie and salsa. That's a favorute of mine, make sure to melt the brie as well. YUM!
My two favs of the moment:
Ciabatta with bacon, stilton & cranberry sauce (m&s cranberry sauce is great but doesn't keep long).
The old classic, bagel with salmon & cream cheese. If you're trying to avoid a cardiac arrest, I find Philly Extra Light to be more than acceptable of late.
Also, anything with goats cheese - even cold Pizza Hut pizza. Hmm, does pizza count as an (albeit open) sandwich?
