Well, the Linux kernel wouldn't be my first choice if designing a new OS... A nano kernel like Minix with re-loadable drivers etc seems far better.
My cleansheet OS would be real-time with a nano not-monolithic kernel, have built in CLI type thing from the beginning structured so that using a C#, Basic, Java etc. type language is transparent, 3D from the beginning. But Linux/Unix is like C: a fairly ok idea at the time (in both cases if you ignore the syntax), now getting a bit old but full of so much inertia it will keep going for ages. Still, Windows is a kludge too. Both are very entrenched and it looks like the ideas from 1970s are not going anywhere soon.
Well certainly the mess which is DirectX but might the kernel not be WinCE? WinCE is in the Wiki list of RTOS (as is Symbian - ironic since Android isn't really).
I wrote one once for an embedded printer controller, not as much fun as it sounds. I went monolithic, many people seem to equate that with "the code must be ugly and unmaintainable" but really that doesn't have to be the case.
WinCE was certainly what a few games used on the Dreamcast, don't own an Xbox but thought it was an embedded NT kernel on there. Certainly WinCE is dead on phones now, so I presume it is being killed off entirely.
QNX has been used as a desktop OS, and is the basis of the playbook OS and BlackBerry 10 - the OS that new high-end BB phones now sport. It probably wouldn't take much work to add a desktop-friendly UI layer on top of it (and it works very well on the playbook ).
Win CE is used on some cheap chinese OEM netbooks, which is pretty close to a desktop environment (in as much as you get a keyboard, a mouse and a screen).
But otherwise there's nothing of real note in there...

It was quite some time ago I read up on it so I could be mistaken, but IIRC the 360's 'OS' is more akin to a BIOS, with the game itself including some of the stuff you'd expect an OS to handle, stuff like memory management and CPU scheduling for example. Don't forget the system software only has something like 16MB of flash to exist on, and a very limited amount of RAM to run in, but I recall MS saying the 'cut down Windows kernel' rumour was a misconception, saying it was instead purpose-built for the console, or at least heavily modified to the extent it bears little resemblance to the original.
Phone basebands are another example of where real-time OSes are used - aside from the application core and OS, the SoC will have another system using something like ARM7, or Cortex A5 in newer devices, managing core functions like the radio interfaces/GSM stack which need to be well-timed and separate from applications for security and stability reasons.

cat - that's only SC2 - no one has tested the new FX chips on D3 or WOW (and likely wont bother , since pretty much everywhere was written them off!)
